- 3 lb. frying chicken, cut
- 1 c. chicken broth or bouillon
- 3/4 c. soy sauce
- 2 Tbsp. brown sugar
- 2 medium onions, cut in wedges
- 2 Tbsp. cornstarch, mixed with 2 Tbsp. white sugar and 4 Tbsp. water
- 2 green peppers, chopped
- 1 c. celery, chopped
- 1 (11 oz.) can mandarin oranges (undrained)
Directions

1Fry the chicken in oil.

2Use salt and pepper to season.

3Brown the chicken, then add broth, soy sauce and brown sugar.

4Cover and simmer over low heat 35 to 40 minutes.

5Remove chicken and add cornstarch, sugar and cold water mixture to pan; stir until thick. Return chicken to pan.

6Add green peppers, celery, onions and mandarin oranges, about 10 minutes before serving.

7This is especially good over rice or Chinese noodles.
