Ingredients
- 2 c. cooked, diced chicken
- 3 tart apples, cored and diced in 1/2-inch pieces
- 1/2 c. sweet onion (1/2-inch pieces)
- 1/4 c. soft butter
- 1 tsp. curry
- 3 Tbsp. flour
- 1 c. milk
- 1 (No. 2) can chicken broth
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 4 c. cooked fluffy rice
Directions

1Put apples, onion and butter in saucepan; saute on low heat until onion is transparent and soft.

2Stir in curry, flour, milk and chicken broth.

3Cook on low until slightly thickened, stirring frequently.

4Add salt, pepper and chicken.

5Cook 5 minutes longer or until chicken is heated through.

6Divide rice in 4 portions; top with curry mixture.

7Serves 4.
