- 1 cup graham cracker crumbs
- 3 tablespoons margarine melted
- 24 ounces cream cheese softened
- 3/4 cup sugar
- 5 tablespoons lemon juice
- 1 1/2 teaspoons lemon zest grated
- 1 teaspoon vanilla extract
- 3 large eggs separated
Directions

1Combine crumbs and margarine; press onto bottom of 9-inch springform pan.

2Bake at 325F (160C) 10 minutes.

3Combine cream cheese, sugar, juice, peel and vanilla, mixing at medium speed on electric mixer until well blended.

4Add egg yolks, one at a time, mixing well after each addition.

5Beat egg whites until stiff peaks form; fold into cream cheese mixture.

6Pour over curst.

7Bake at 300F (150C) 45 minutes.

8Loosen ckae from rim of pan; cool before removing rim of pan.

9Chill.

10Top with cherry pie filling or fresh fruit, if desired.
