  • 1 cup orzo pasta
  • 1/2 red onion small, finely chopped
  • 1/2 yellow pepper
  • 1/2 English cucumber large, skin removed and deseeded
  • 1/4 teaspoon ground black pepper
  • 1/3 cup crumbled feta cheese
  • 1/4 cup Italian parsley minced plus more for garnish
  • 3 tablespoons Italian parsley roughly chopped
  • 1 tablespoon orange juice
  • 1 tablespoon lemon juice
  • 2 1/2 tablespoons olive oil
  • 1/8 teaspoon sea salt

Directions

    Cook orzo pasta according to the package instructions.

    While the pasta is cooking, make the vinaigrette. In a small blender or food processor, combine the ingredients to make the vinaigrette. Blend for about 20 seconds or until the dressing is emulsify.

    In a large bowl, add the cooked orzo pasta and vinaigrette. Use a fork and mix well until the dressing evenly coats the pasta.

    Add red onion, yellow pepper, cucumber, ground pepper, feta cheese, and parsley to the pasta. Mix well until the ingredients are incorporated.

    Garnish with minced parsley. Serve room-temperature or chilled.
