Orzo Salad

Ingredients

  • 1 cup risoni
  • 1 cup feta cheese
  • 13 cup salad oil
  • 3 tablespoons parsley (chopped)
  • 3 tablespoons dill (chopped) or 1 tablespoon dried dill
  • 14 cup lemon juice
  • 12 teaspoon salt
  • 14 teaspoon pepper (I like to use freshly ground black pepper)
  • 1 tomatoes (diced)

Directions

    Cook Risoni according to package directions.

    Drain and rinse with cold water.
  3. 3
    Add feta cheese, parsley and dill.
  4. 4
    In a container shake together the oil, lemon juice, salt and pepper.

    Pour this over the salad and toss.

    Place in fridge to chill.

    Before serving toss again and decorate with the diced tomato on top.
