- 4 veal shanks or 4 lamb shanks
- 1 garlic clove, minced
- 3 tablespoons olive oil
- 1 cup canned consomme
- 14 cup dry white wine
- 2 tablespoons tomato paste
- 1 lemon, rind of, cut into strips
- 3 small carrots, finely diced
- 1 tablespoon parsley, chopped
- 14 teaspoon dried marjoram, crushed
- 14 teaspoon dried oregano, crushed
- 18 teaspoon dried sage, crushed
Directions

1Roll shanks in flour; brown with garlic in hot oil in skillet.

2Add remaining ingredients to crockpot.

3Stir to mix.

4Add shanks.

5Cover pot and cook on LOW for 10 to 12 hours until shanks are tender.

6Garnish with parsley.

7Serve with pasta.
