"Our" Carrot Cake

  • 2 c. all-purpose flour
  • 2 c. sugar
  • 2 tsp. baking soda
  • 1 tsp. salt
  • 2 tsp. ground cinnamon
  • 1 c. cooking oil
  • 4 eggs
  • 4 c. grated raw carrots (about 8 medium carrots)
  • 1/2 c. chopped pecans (optional)

Directions

    Thoroughly stir together flour, sugar, soda, salt and cinnamon. In a large bowl, beat eggs until frothy. Slowly beat in oil. Gradually add the flour mixture, beating until smooth. Mix in carrots and nuts.

    Pour into greased and floured Bundt pan.

    Bake at 350° until done (about 40 minutes). Cool on rack and frost with a cream cheese frosting.
