Ingredients

  • 2 lb. beef, cut into 1-inch cubes
  • 1/3 c. flour
  • 2 tsp. salt
  • 1/4 tsp. pepper
  • 1/3 c. oil
  • 1 (16 oz.) can tomatoes
  • 1 (10 oz.) pkg. frozen peas, thawed
  • 1 (4 oz.) can mushrooms, drained
  • 10 small whole onions
  • 3 c. hot mashed potatoes
  • 1/2 lb. Velveeta pasteurized process cheese spread, cubed

Directions

    Coat meat with combined flour and seasonings.

    Brown in oil; drain.

    Combine meat, tomatoes, peas, mushrooms and onions; mix well.

    Pour into 2-quart casserole.

    Cover; bake at 325° for 1 hour and 45 minutes or until meat and onions are tender.

    Combine potatoes and process cheese spread; spoon around edge of casserole.

    Broil until process cheese spread begins to melt. Makes 6 to 8 servings.
