  • 1 1/2 tsp. Chicken Coating Mix
  • 3/4 c. all-purpose flour
  • 1/4 c. instant nonfat dry milk
  • 2 tsp. sugar
  • 1 tsp. baking powder
  • 1/2 tsp. salt
  • 2/3 c. hot water
  • 2 Tbsp. vegetable oil
  • 1 (2 1/2 to 3 lb. ) fryer chicken, cut up

Directions

    Preheat oven to 425° F (220° C).

    Combine all ingredients except chicken in a small bowl.

    Blend well.

    Dip chicken pieces in batter and place on a baking sheet.

    Bake, uncovered, 40 to 50 minutes, until golden brown and tender.

    Or, if desired, dip chicken pieces in batter then fry in hot oil.
