- 2 chickens, cut up
- 1/2 c. shortening
- 1 c. sliced onion
- 1 c. diced celery
- 6 Tbsp. flour
- 3 c. milk
- 1/4 tsp. each: thyme and sage
- 2 to 3 tsp. salt
- pepper
Directions

1Dip chicken in egg and small amount of water mixture; dredge in flour, flour/cornmeal mix or cracker crumbs.

2Fry in shortening and place in casserole.

3Add onion and celery to remaining shortening.

4Cook over low heat until soft and lightly brown. Stir in flour; slowly add milk and stir until thick and smooth. Add seasonings.

5Pour gravy over chicken; cover and bake at 325° for about an hour or until chicken is tender.
