Oven-Fried Chicken

  • 1 c. mashed potato flakes
  • 1/4 tsp. pepper
  • 1/4 to 1/2 tsp. poultry seasoning
  • 2 egg whites, slightly beaten
  • 1 tsp. lemon juice
  • 1 (2 1/2 to 3 lb.) frying chicken, cut up and skinless

    Heat oven to 375°.

    In plastic bag, combine potato flakes, pepper and poultry seasoning. In shallow bowl combine egg whites and lemon juice.

    Dip chicken, a few pieces at a time, in egg mixture.

    Shake chicken in potato flake mixture to coat.

    Place chicken in ungreased 15 x 10 x 1-inch baking pan.

    Bake uncovered at 375° for 45 to 60 minutes or until chicken is fork-tender and juices run clear.
