- 1 c. mashed potato flakes
- 1/4 tsp. pepper
- 1/4 to 1/2 tsp. poultry seasoning
- 2 egg whites, slightly beaten
- 1 tsp. lemon juice
- 1 (2 1/2 to 3 lb.) frying chicken, cut up and skinless
Directions

1Heat oven to 375°.

2In plastic bag, combine potato flakes, pepper and poultry seasoning. In shallow bowl combine egg whites and lemon juice.

3Dip chicken, a few pieces at a time, in egg mixture.

4Shake chicken in potato flake mixture to coat.

5Place chicken in ungreased 15 x 10 x 1-inch baking pan.

6Bake uncovered at 375° for 45 to 60 minutes or until chicken is fork-tender and juices run clear.

7Makes 4 to 5 servings.
