Oven Fried Eggplant

- 1 medium eggplant
- 1/2 c. milk
- flour
- margarine or butter
- salt and pepper to taste
Directions

1Pare and slice eggplant into 1/2-inch slices.

2Salt and pepper to taste, if desired.

3(Salt may be omitted for low salt diet.) Dip in milk, then roll in flour.

4Place on baking sheet and bake in 375° oven until crisp, turning once.

5Remove from oven and spread margarine on each slice while still hot, if desired.
