Oven Fried Falafel

- 1 can (15 Oz. Size) Chickpeas, Rinsed And Drained
- 1 teaspoon Cumin
- 1/2 teaspoons Garlic Powder
- 1/4 teaspoons Onion Powder
- 1 Tablespoon All-purpose Flour
- 1 dash Cayenne Pepper To Taste
- 1 Tablespoon Chopped Cilantro (or Scallions, If You Prefer)
- Salt And Pepper, to taste
- 1 whole Egg
- 1 Tablespoon Olive Oil
Directions

1Place the chickpeas in a large bowl and mash them with a potato masher or fork.

2They should still be a little chunky.

3Stir in the cumin, garlic powder, onion powder, flour, cayenne and cilantro.

4Season with salt and pepper to taste before mixing in the egg.

5Line a baking sheet with parchment paper and spread the oil over the paper.

6Form 1-ounce balls (I used a 1-ounce scoop) of the mixture and place them on the greased baking sheet.

7Bake in a preheated 425 degrees F oven for 20-30 minutes, until the falafel balls are golden brown.

8Makes approximately 1 dozen falafel, or 3-4 servings.

9Serve with pita or other flatbread, cucumbers, tomatoes, red onion and tahini sauce.
