  • 3/4 c. corn flake crumbs
  • 1/4 c. grated Parmesan cheese
  • 1/2 tsp. ground red pepper
  • 1/4 tsp. salt
  • 1/4 tsp. black pepper
  • 1 1/2 lb. fish fillets
  • 2 eggs, lightly beaten

    Preheat the oven to 500°. Combine first 5 ingredients in a shallow dish. Stir well. Dip fish in eggs and dredge in crumb mixture. Place fish on a baking sheet coated with vegetable cooking spray. Bake at 500° for 8 minutes or until fish flakes easily when tested with a fork. Makes 4 servings.
