- 12 lb okra, cut into 1-inch lengths
- 12 cup plain breadcrumbs
- 12 cup Italian seasoned breadcrumbs
- 1 teaspoon salt
- 1 teaspoon pepper

1Preheat oven to 450*.

2Pour egg substitute into a medium bowl.

4In a large ziplock bag, combine both types of bread crumbs, salt, and pepper.

6Add okra and egg substitute mixture to the bag and shake until coated.

7Place a wire rack in top of a cookie sheet.

8Arrange okra on rack and bake until crisp, about 10 minutes.
