Oven Hashed Brown Potatoes

  • 3 lb. potatoes, washed and unpeeled
  • 1/2 c. butter or margarine
  • 2 large onions, chopped
  • 2 Tbsp. Worcestershire sauce
  • 2 tsp. salt
  • 1 Tbsp. paprika
  • 1/2 tsp. pepper
  • 2 Tbsp. chopped parsley

    Grease a 9 x 6-inch baking dish.

    Place potatoes in saucepan. Add boiling salted water to half cover them.

    Cover and boil for 20 minutes or until tender.

    Drain, cool, then peel and cube.

    Place in baking dish.

    Melt butter or margarine in skillet.

    Saute onions for 2 minutes.

    Remove from heat.

    Stir in remaining ingredients. Pour over potatoes.

    Stir with fork to mix.

    Bake in preheated oven at 425° for 1 hour.

    Just before serving, place under broiler for a few minutes to brown.
