- 8 whole Roma Tomatoes
- 1/2 whole Yellow Onion, Rough Chopped
- 1 whole Large Anaheim Pepper
- 1 whole Jalapeno Pepper
- 4 cloves Garlic
- 2 Tablespoons Vegetable Oil
- 1/2 cups Fresh Cilantro
- Kosher Salt To Taste
- Sliced Green Onions, For Garnish
Directions

1Preheat the oven to 400 degrees F.

2On a sheet pan, place the tomatoes, onions, peppers and garlic cloves.

3Drizzle and toss with the vegetable oil and sprinkle with some kosher salt.

4Roast the vegetables for 15 minutes or until everything is soft, roasted and fragrant.

5Peel the skin off of the Anaheim pepper and dispose of the stem.

6Dispose of the jalapeno stem, too.

7Transfer all of the vegetables to a food processor.

8Add the fresh cilantro.

9Pulse until you have a good, smooth consistency.

10Season generously with Kosher salt to taste and garnish with green onions.

11Refrigerate until ready to serve.
