- 6 Idaho (large) potatoes
- 6 strips of bacon, diced
- 1 medium chopped onion
- 3 stalks celery, chopped
- 1/4 lb. mushrooms, chopped
- 3/4 c. shredded sharp cheese
Directions

1Bake potatoes until tender; remove from oven and cut in half the long way.

2Cool.

3Saute bacon until almost done.

4Add onion, celery, and mushrooms; saute until browned.

5Scoop potatoes out of shell.

6Put shells aside for later.

7Mix potatoes, bacon mixture, and cheese with hand masher.

8Refill potato shells with mixture. Bake at 325° for 40 to 45 minutes or until browned.
