Ingredients

  • 3 lb. oxtail
  • 2 onions, chopped
  • 1 bay leaf
  • 1 Tbsp. salt
  • 1/2 tsp. pepper
  • 2 1/2 qt. water
  • 3 carrots, cut up
  • 1 c. celery, cut up
  • 1 potato, cut in cubes
  • 1/2 c. barley
  • 2 Tbsp. parsley

Directions

    Place first 6 ingredients in a kettle, simmer for 3 hours. Skim fat from soup.

    Add remaining ingredients and simmer for 30 minutes or until vegetables are tender.

    Add parsley and serve.
