Oyster And Spinach Soup

Ingredients
- 1/2 c. finely chopped onion
- 2 cloves garlic, minced
- 1/2 c. butter
- 3 (12 oz.) cans oysters, drained
- 1/2 c. all-purpose flour
- 1 1/2 qt. half and half
- 2 c. chicken broth
- 2 (10 oz.) pkg. frozen spinach, thawed
- 1 Tbsp. salt
- white pepper to taste
Directions

1Saute onion and garlic in butter until tender; add oysters which have been halved or chopped coarsely.

2Cook until edges of oysters begin to curl.

3Blend in flour; cook until bubbly. Gradually add half and half and cook, stirring constantly, until thickened.

4Stir in broth and spinach; bring to a boil.

5Remove from heat and add salt and pepper.

6Yields 8 to 10 servings.
