Oyster Chowder

Ingredients

  • 1 pt. oysters (undrained)
  • 1/2 c. chopped onion
  • 1/2 c. chopped celery
  • 1/3 c. butter or margarine
  • 4 c. milk
  • 1 (8 3/4 oz.) can whole kernel corn (undrained)
  • 1 c. peeled, diced and cooked potatoes
  • 1/2 tsp. salt
  • 1/2 tsp. white pepper
  • paprika

Directions

    Drain oysters, reserving liquid.

    Saute onion and celery in butter in a large pot until tender.

    Add milk, oyster liquid, corn, potatoes, salt and pepper.

    Cook over low heat, stirring constantly, until thoroughly heated (do not boil).

    Add oysters; simmer 5 to 8 minutes or until edges of oysters curl.

    Sprinkle lightly with paprika.
