Oyster Dressing

Ingredients

  • 3 1/2 qt. coarse white bread crumbs, loosely packed
  • 1 tsp. salt
  • 1/2 tsp. rosemary
  • 1/2 tsp. thyme
  • 1/2 tsp. tarragon
  • 1/4 tsp. white pepper
  • 1/4 lb. margarine
  • 3/4 c. finely chopped celery
  • 1/2 medium onion, chopped
  • 1 1/4 c. chopped oysters
  • 1 c. chicken stock or bouillon

    Pull crumbs from crusts of 3 or 4 day old bread.

    Disregard crusts.

    Add salt, seasonings and pepper; toss.

    Melt margarine, add celery and onion.

    Saute until just softened, then stir in oysters.

    Pour over bread crumbs with chicken stock.

    Mix lightly with fork or hands.

    Put in 8 x 11 x 2-inch baking dish and cook, uncovered, in 350° oven for one hour.
