- 1 qt. oysters
- 2 c. oyster liquor
- 2 c. heavy cream
- 4 Tbsp. butter
- celery salt
- pepper
Directions

1Bring 1 cup of the oyster liquor to a boil and when it has cooked for 5 minutes, skim off the top, which will be foamy.

2Add the cream, butter and seasonings to taste.

3Cook the oysters in the other cup of liquor until the edges curl (about 5 minutes). Strain and add to the cream.

4Serve immediately.
