Ingredients

  • 12 oysters in the half shell
  • 1/4 c. butter
  • 2 Tbsp. parsley, finely chopped
  • 2 Tbsp. celery hearts, finely chopped
  • juice of 1/2 lemon
  • 4 slices bacon, partially cooked
  • pans of rock salt
  • 3 Tbsp. shallots, finely chopped
  • 2 Tbsp. green pepper, finely chopped
  • 2 Tbsp. pimento, chopped

Directions

    Imbed the oysters in the pans of rock salt.

    Cream together the butter, shallots, parsley, green pepper, celery and lemon juice.

    Put a piece of the butter mixture on each oyster.

    Top with pimento and a square of the bacon.

    Bake at 450° until the bacon is browned, about 5 to 8 minutes.

    Serves 2.
