Ingredients
- 1 doz. fresh oysters
- 1 tsp. chopped garlic
- 1 medium chopped onion
- 1/2 c. bread crumbs
- 1/2 c. Parmesan cheese
- 1/4 c. white wine
- 1/4 c. olive oil
- 1/2 lb. bacon, chopped
- 2 c. chopped spinach
- 1/4 c. lite cream
Directions

1Saute bacon, onion and garlic in olive oil until glossy.

2Add chopped spinach; heat for 10 minutes.

3Add cream; heat for 5 more minutes.

4Open oysters and loosen meat in shell.

5Sprinkle oysters with white wine and add spinach mixture.

6Heat in 350° oven for 10 to 12 minutes.

7Remove and dust oysters and spinach with Parmesan cheese and bread crumbs.

8Put oysters under broiler 2 or 3 minutes until brown and serve.
