- 2 doz. Maryland oysters in shell
- 2 Tbsp. butter or margarine
- 2 Tbsp. flour
- 2 c. milk
- 2 Tbsp. shredded Swiss cheese
- 1 tsp. grated Parmesan cheese
- 1 tsp. Worcestershire sauce
- 1/4 tsp. nutmeg
- 1/8 tsp. pepper
- salt to taste
- 5 oz. chopped spinach
Directions

1Open oysters, letting remain in deep half of shell.

2Melt butter in 1-quart saucepan, blend in flour and slowly add milk. Simmer for 5 minutes, stirring occasionally.

3Add the Swiss and Parmesan cheese and stir until cheese melts.

4Stir in Worcestershire sauce, nutmeg, pepper and salt.

5Cook spinach and squeeze out excess moisture.

6Blend spinach into cheese sauce and let mixture cool.

7Top each oyster with 1 tablespoon spinach mixture.

8Sprinkle with Parmesan cheese and bake at 400° for 10 to 15 minutes.

9Makes 2 dozen.
