  • 1 egg, well beaten
  • 3/4 c. brown sugar
  • 3/4 c. flour (unsifted)
  • 1 1/2 tsp. baking powder
  • 1/2 tsp. cinnamon
  • 1 tsp. vanilla
  • 3/4 c. finely chopped apples
  • 1/2 c. finely chopped pecans or black walnuts

    Beat egg and sugar well in a small mixing bowl; sift flour with baking powder and cinnamon.

    Mix in.

    Stir in vanilla, apples and nuts.

    Spoon batter into a well-greased and floured 8 x 8 x2-inch pan; bake at 350° for 30 minutes or until crusty brown on top.

    Let pudding cool about 1/2 hour before serving.
