- 1 2/3 c. flour
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. nutmeg
- 1 ripe banana
- 1/3 c. peanut butter
- 1/2 c. sugar
- 2 eggs
- 2/3 c. sour cream
Directions

1Preheat oven to 450°.

2Place paper liners in muffin tins.

3Set aside.

4Combine flour, baking powder, cinnamon and nutmeg in a medium bowl.

5Toss with a fork to blend; set aside.

6Peel banana; break into small pieces and set aside on wax paper.

7In a large mixing bowl combine peanut butter and sugar.

8Mix at medium speed to blend, scraping sides of bowl with a rubber spatula, if necessary.

9Add eggs; blend.

10Add bananas; blend.

11Add flour mixture in 2 stages and mix until completely blended in.

12Do not overmix.

13Add sour cream; blend.

14Spoon batter into muffin cups to 3/4 full.

15Bake for 25 minutes.

16Cool on rack 10 minutes.

17If preparing for freezer, cool completely and then wrap in plastic wrap and freeze.
