Ingredients

  • 1 large box lime jello (6 oz.)
  • 2 c. boiling water
  • juice of 18 oz. can pineapple
  • 2 c. creamy cottage cheese
  • 2 tsp. horseradish
  • 1 c. cream, whipped
  • 1/2 c. chopped nuts
  • 1 can pineapple chunks

Directions

    Dissolve jello in boiling water and add pineapple juice.

    Chill until slighlty thickened, then beat until frothy.

    Fold in pineapple.

    Add cottage cheese, horseradish, whipped cream and nuts.

    Chill in mold for at least two hours or overnight.

    Unmold onto lettuce bed.

    Fill center with pineapple chunks.
