  • 12 lb pork tenderloin
  • 34 cup onion (chopped)
  • 2 garlic cloves (diced)
  • 12 lb fish
  • 12 lb lobster
  • 34 lb shrimp
  • 12 clams
  • 12 mussels (de-bearded)
  • 1 teaspoon paprika
  • 6 artichoke hearts
  • 1 lb chicken, cut up (thighs and legs work best)
  • 4 links chorizo sausage (sliced 1/2-inch thick)
  • 1 green pepper (optional)
  • 1 cup peas
  • 4 cups rice
  • 2 large tomatoes (diced)

    Cook pork, chorizo, and chicken in olive oil, with onion, garlic, and artichoke hearts.
