- 1 1/2 c. rice
- olive oil
- garlic
- onion
- sausage
- red peppers
- 1 to 2 c. chicken broth
- vegetables (your choice)
- chicken parts or strips
- shellfish (shrimp, clams, mussels)
- 2 Tbsp. paprika
- pinch of saffron
Directions

1Brown rice in olive oil until brown.

2Remove from pan.

3Saute onions, garlic, sausage, peppers in olive oil and whatever other vegetables and raw meat you use.

4Add rice, chicken broth and paprika (adjust quantity) and bring to boil.

5Add saffron, pinch only, boil 8 minutes.

6Add shellfish.

7Bury shellfish in rice. Simmer until rice absorbs all liquid.

8Do not cover.
