Ingredients
- 2 cup Coconut milk
- 3 each Eggs
- 1 tsp Vanilla extract
- 2 tbsp Coconut oil (melted)
- 1/3 cup Coconut sugar
- 1/2 cup Coconut flour
- 1 cup Tapioca flour
- 1 tsp Baking powder
- 2 each Banana (optional)
Directions

1Whisk together wet ingredients.

2Whisk dry ingredients or sift, as the flour is clumpy.

3Combine both bowls into one and whisk together.

4(Optional) Mash bananas (or other fruit) and fold into batter

5Leave batter to sit for 10 minutes and then whisk again.

6Preheat pan with coconut oil (or butter)

7When the pan is ready, use your ladle to pour the batter into the pan.

8About 5 minutes for the first side, flip for an additional 2 minutes or desired browness.

9Top with your favorite syrup or sauce.
