- 1/4 c. olive or salad oil (I used olive)
- 2 Tbsp. butter or margarine
- 8 large all-purpose potatoes, pared and quartered
- 2 c. boiling water
- 1 small red pepper, chopped
- 1 small green pepper, chopped
- 1/2 c. thinly sliced green onions
- 1 clove garlic, minced
- 1 tsp. salt
- 1/2 tsp. pepper
- 1/4 c. chopped parsley
Directions

1In a large, heavy skillet, over medium-high heat, heat oil and butter.

2Add enough potatoes to make a single layer in skillet. Cook, turning occasionally, until golden brown, about 10 minutes. Transfer to a boil; repeat with remaining potatoes.
