Pan-Fried Bitter Melon

- 1 Bitter melon
- 1 tbsp each Soy sauce, sake
- 10 grams Garlic and ginger
- 1 tbsp plus Katakuriko
- 2 tbsp Oil
Directions

1Halve the bitter melon.

2Remove its seeds and fiber, and cut into 5 mm slices.

3You don't need to remove any bitterness by soaking it in salt water.

4Put the bitter melon and the ingredients into a plastic bag and let the flavors settle in.

5Transfer the bitter melon into a new plastic bag, and coat with katakuriko.

6Let some air into the bag and shake it around.

7The katakuriko will coat the melon nicely.

8Heat some oil in a frying pan and pan-fry the bitter melon.

9Flip them over once they're nicely browned.

10They're done when both sides become crisp.
