Pan-Fried Bitter Melon

  • 1 Bitter melon
  • 1 tbsp each Soy sauce, sake
  • 10 grams Garlic and ginger
  • 1 tbsp plus Katakuriko
  • 2 tbsp Oil

    Halve the bitter melon.

    Remove its seeds and fiber, and cut into 5 mm slices.

    You don't need to remove any bitterness by soaking it in salt water.

    Put the bitter melon and the ingredients into a plastic bag and let the flavors settle in.

    Transfer the bitter melon into a new plastic bag, and coat with katakuriko.

    Let some air into the bag and shake it around.

    The katakuriko will coat the melon nicely.

    Heat some oil in a frying pan and pan-fry the bitter melon.

    Flip them over once they're nicely browned.

    They're done when both sides become crisp.
