- 1/2 c. buttermilk
- 1/2 c. oat bran
- 1/4 c. flour
- 2 whole trout
- 1 Tbsp. butter
- 2 Tbsp. oil
- 1 egg
- salt and pepper
Directions

1Mix buttermilk and egg in a bowl.

2Mix oat bran, flour, salt and pepper in shallow bowl.

3Dip trout first in buttermilk mixture, then in oat bran mixture.

4Shake off excess.

5Heat oil and butter in large skillet on medium heat.

6Add trout.

7Reduce heat.

8Cook 4 to 5 minutes on each side.

9Garnish with lemon (use nonstick pan).
