- 2 lbs trout fillets, boned and skinned
- 12 slices bacon
- 1 egg
- 1/4 cup milk
- 1 teaspoon salt
- 1/8 teaspoon pepper
- 1/2 cup all-purpose flour
- 1/4 cup yellow cornmeal
- 1 teaspoon paprika (optional)
Directions

1Rinse trout fillets under cold running water, pat dry and cut in serving pieces.

2Fry bacon until crisp.

3Remove from pan and drain on paper towels.

4Set aside.

5In a bowl, beat egg.

6Stir in milk, salt and pepper.

7In a pie plate, combine flour, cornmeal, and paprika.

8Dip fish pieces in egg mixture, then coat with flour mixture.

9Fry in the reserved (hot) bacon fat until fish are golden brown, 2-3 minutes on each side.

10Drain on paper towels and garnish with bacon.
