  • 5 Tbsp. olive oil
  • 2 1/2 c. fresh corn kernels (about 3 large ears)
  • 1 large tomato, seeded, diced (about 3/4 c.)
  • 2/3 c. chopped green onions
  • 1/4 c. chopped fresh cilantro
  • 1/4 c. finely diced sweet onion
  • 3 Tbsp. fresh lime juice
  • 1 Tbsp. minced jalapeno with seeds
  • 3 garlic cloves, minced
  • salt and pepper

    Heat 2 tablespoons oil in heavy large skillet over high heat; add corn. Saute until light brown; cool. Add remaining 3 tablespoons olive oil, tomato and remaining ingredients to corn in bowl. Toss to combine. Season with salt and pepper.
