  • 2 salmon fillets
  • 1 tbsp brown sugar
  • 1/4 tsp salt or to taste
  • 1/2 tsp black pepper
  • 1 cup olive oil, extra virgin
  • 1 tsp dry parsley
  • 1/2 tsp cayenne pepper
  • 1 tsp granulated sugar

Directions

    Using a castiron skillet or heavy frying pan heat to medium.

    Coat fillets in olive oil on both sides.

    Mix all dry ingredients in a bowl and sprinkle on the side opposite of the skin.

    Place fillets face down, reduce heat slightly, let cook for 7 minutes flip on opposite side and let cook for 5 minutes or until desire crisps.
