- 2 salmon fillets
- 1 tbsp brown sugar
- 1/4 tsp salt or to taste
- 1/2 tsp black pepper
- 1 cup olive oil, extra virgin
- 1 tsp dry parsley
- 1/2 tsp cayenne pepper
- 1 tsp granulated sugar
Directions

1Using a castiron skillet or heavy frying pan heat to medium.

2Coat fillets in olive oil on both sides.

3Mix all dry ingredients in a bowl and sprinkle on the side opposite of the skin.

4Place fillets face down, reduce heat slightly, let cook for 7 minutes flip on opposite side and let cook for 5 minutes or until desire crisps.
