Ingredients
- 1 1/4 c. sifted flour
- 2 tsp. baking powder
- 1 Tbsp. sugar
- 1/2 tsp. salt
- 1 egg, beaten
- 1 c. milk
- 2 Tbsp. shortening, melted
Directions

1Have all ingredients at room temperature.

2Sift and measure the flour.

3Sift together the flour, baking powder, sugar and salt.

4To the beaten egg, add the milk and mix together.

5Add the melted shortening after it has cooled slightly.

6Add the liquid ingredients to the dry ingredients.

7Mix until the batter is fairly smooth.

8Pour the batter on a hot griddle to bake, about 3 to 4 tablespoons for each cake.

9Turn the cake when the top is covered with tiny bubbles and the bottom is a delicate brown.

10Brown the other side.

11Serve at once.
