  • 2 c. plain (all-purpose) flour
  • pinch of salt
  • 3 tsp. baking powder
  • 1/3 c. sugar
  • 2 eggs
  • 1 1/2 c. milk
  • 2 1/2 oz. melted butter

Directions

    Sift the dry ingredients into a bowl; beat eggs lightly in a smaller bowl.

    Make a well in the center of dry ingredients and add eggs, milk and butter. (Add extra milk to the desired consistency.)

    Cook over medium heat on a nonstick griddle until bubbles surface; flip and cook until golden brown.
