- 1 c. flour
- 1 tsp. baking powder
- 1/2 tsp. baking soda
- 1 tsp. sugar
- 1/2 tsp. salt
- 1 egg
- 1 c. buttermilk, room temperature
- 1 Tbsp. cooking oil
Directions

1Add baking soda to buttermilk.

2Mix remaining dry ingredients together.

3Lightly beat the egg together with the oil and add to the buttermilk/soda mixture.

4Pour liquid ingredients, as mixed, into dry ingredients and combine lightly.

5This should be a thin batter, to make tender, thin pancakes.

6Cook on a hot griddle, taking care to keep pancakes no more than three inches in diameter.
