- 2 c. sifted all-purpose flour
- 2 Tbsp. sugar
- 4 tsp. baking powder
- 1 tsp. salt
- 2 eggs, beaten
- 1 1/2 c. milk
- 1/4 c. cooking oil or melted shortening
Directions

1Sift flour with sugar, baking powder and salt into mixing bowl.

2Combine eggs, milk and cooking oil; add to dry ingredients. Beat quickly only until large lumps disappear.

3If batter thickens upon standing, thin it with 1/4 to 1/2 cup milk.

4Pour batter onto hot, lightly greased griddle (for an electric griddle, set at 375°).

5Bake until bubbles break and edges are cooked. Turn and bake other side.

6Yields 16 (4-inch) pancakes.
