Ingredients
- 5 eggs
- pinch of salt
- 1 1/2 c. milk
- 1 1/2 c. sifted flour
- 1/4 tsp. baking powder
- 1 tsp. vanilla
Directions

1Beat eggs with salt, milk, baking powder and vanilla.

2Add flour to mixture.

3Using a whisk, mix thoroughly.

4(Small lumps in batter are okay.)

5Heat 2 to 3 tablespoons oil in medium sized pan on medium heat.

6Coat bottom of pan with oil evenly.

7(Lift pan and gently tip from side to side to coat pan.)

8Pour approximately a 1/4 cup of the batter into the heated pan.

9Spread batter over surface of pan with spoon.

10Fry until light golden.

11Using spatula, flip pancake over to bake second side.

12Makes 10 to 12 pancakes.
