Pancetta Asparugus

- 1 1/2 oz. pancetta
- 1 tablespoon olive oil
- 2 garlic cloves crushed
- 2 tablespoons butter
- 1 lb. fresh asparugus spears
- 1/2 teaspoon of salt
- 1/8 teaspoon of pepper
- 1 lemon
Directions

1Cook pancetta and olive oil over medium heat until pancetta is light brown and slightly crisp. Transfer to a plate lined with paper towels. Keep fat in pan and stir in the garlic until golden brown then transfer to the plate with the pancetta. Then melt the butter in the pan and add the asparugus spears. Add salt and pepper. Saute the asparugus spears until light golden brown. (The spears generally don't brown evenly). Transfer the asparugus to serving platter. Scatter the pancetta and garlic over them and serve with a lemon wedge.
