Ingredients

  • 3 teaspoons gelatin
  • 6 tablespoons sugar
  • 4 cups soy milk
  • 2 teaspoons vanilla
  • 1 pinch salt
  • 12 ounces mixed berries
  • 2 tablespoons sugar
  • 1/8 teaspoon salt
  • 2 teaspoons lemon juice
  • 1/4 cup water

    Add gelatin to milk and let it sit for 10 mins

    Add 6 tbsp of sugar and a pinch of salt to the milk/gelatin mixture and heat up to 135 degrees

    In a separate metal bowl, add 3 cups of heavy cream and 2 tsp vanilla. Sit the bowl in ice.

    Pour the heated milk slowly into the heavy cream and keep stirring for 10 mins until slightly thicken

    Pour the cream into ramikins and let it chill and set in the fridge

    Mixed Berry Sauce Boil 12 oz mixed berries, 1/4 water, 2 tbsp sugar, 1/8 tsp salt, 2 tsp lemon juice in a pot. Blend and sieve
