- 3 teaspoons gelatin
- 6 tablespoons sugar
- 4 cups soy milk
- 2 teaspoons vanilla
- 1 pinch salt
- 12 ounces mixed berries
- 2 tablespoons sugar
- 1/8 teaspoon salt
- 2 teaspoons lemon juice
- 1/4 cup water
Directions

1Add gelatin to milk and let it sit for 10 mins

2Add 6 tbsp of sugar and a pinch of salt to the milk/gelatin mixture and heat up to 135 degrees

3In a separate metal bowl, add 3 cups of heavy cream and 2 tsp vanilla. Sit the bowl in ice.

4Pour the heated milk slowly into the heavy cream and keep stirring for 10 mins until slightly thicken

5Pour the cream into ramikins and let it chill and set in the fridge

6Mixed Berry Sauce Boil 12 oz mixed berries, 1/4 water, 2 tbsp sugar, 1/8 tsp salt, 2 tsp lemon juice in a pot. Blend and sieve
