Papaya Crisp

Ingredients

  • 8 c. firm, ripe papayas, peeled and thickly sliced
  • 2 to 3 Tbsp. tapioca
  • 2 Tbsp. lemon juice
  • 1/2 c. each: raisin and nuts (optional)
  • 1 c. sugar
  • 1 tsp. ground cinnamon
  • 1/2 tsp. ground nutmeg
  • 3/4 c. flour
  • 1/3 c. butter or margarine

Directions

    Mix papaya, tapioca, lemon juice, raisins, 1/2 cup sugar, cinnamon and nutmeg well.

    Pour into a 9-inch square baking pan. Combine remaining 1/2 cup sugar and flour.

    Cut in butter until mixture is crumbly.

    Sprinkle over papaya mixture.

    Bake, uncovered, in 400° oven for 45 minutes or until lightly brown. May be served with ice cream.
