  • 1 lb. chicken meat, very thinly sliced
  • 2 Tbsp. soy sauce
  • 1 Tbsp. dry sherry (or dry white wine)
  • 1/2 tsp. brown sugar or honey
  • 1/2 tsp. salt
  • 1 scallion, very thinly sliced
  • 1 tsp. grated fresh ginger root
  • 2 c. vegetable oil for frying
