- 2 Tbsp. yellow cornmeal
- 1 tsp. paprika
- 1/8 tsp. ground red pepper
- 8 (4 oz.) farm-raised catfish fillets
- vegetable cooking spray
Directions

1Combine first 4 ingredients in a large ziptop plastic bag. Add fillets; seal bag and shake to coat fillets with cheese mixture.

2Place on broiler pan coated with cooking spray; discard remaining cheese mixture.

3Broil 3 inches from heat (with electric oven door partially opened) 10 minutes or until fish flakes easily when tested with a fork.
