- 4 large catfish fillets
- 2 beaten eggs
- 1/2 cup milk
- 1 cup soft breadcrumbs
- 1 cup grated parmesan cheese
- 2 teaspoons minced garlic
- 1/4 cup chopped fresh parsley
- 2 teaspoons dried oregano
- 1 teaspoon salt
- 1 teaspoon course-ground black pepper
- nonstick cooking spray
Directions

1Heat oven to 400*.

2Rinse fillets and pat dry.

3Mix eggs and milk in a small bowl.

4Combine remaining ingredients in another bowl.

5Dip fillets into egg mixture, and then into bread crumb mixture, coating evenly.

6Place fillets, rounded-side up, on a greased baking sheet.

7Spray fillets lightly with non-stick cooking spray and bake, uncovered, for about 15 minutes, or until fish flakes when tested with a fork.
