- 1 lb. fresh or frozen fillets
- 1/4 c. flour
- dash of garlic salt
- 1 egg, beaten
- 1/4 c. milk
- 1/2 c. finely crushed saltines (14)
- 2 Tbsp. grated Parmesan cheese
- 2 Tbsp. finely snipped parsley
Directions

1Dry fish.

2Combine flour and garlic salt and set aside.

3Blend egg and milk; set aside.

4Combine crumbs, cheese and parsley. Coat fillets in flour, then egg, then crumbs.

5Fry over medium heat in 1/4 cup oil for 4 to 5 minutes per side.

6Drain on paper towel.

7Makes 3 to 4 servings.
