Parmesan Fried Fish

Ingredients

  • 1 lb. fresh or frozen fillets
  • 1/4 c. flour
  • dash of garlic salt
  • 1 egg, beaten
  • 1/4 c. milk
  • 1/2 c. finely crushed saltines (14)
  • 2 Tbsp. grated Parmesan cheese
  • 2 Tbsp. finely snipped parsley

Directions

    Dry fish.

    Combine flour and garlic salt and set aside.

    Blend egg and milk; set aside.

    Combine crumbs, cheese and parsley. Coat fillets in flour, then egg, then crumbs.

    Fry over medium heat in 1/4 cup oil for 4 to 5 minutes per side.

    Drain on paper towel.

    Makes 3 to 4 servings.
